Why is my car jerking when i shift especially from 1st to 2nd?

When chaning the oil on a car will all of the oil drain properly using ramps?

I am concerned that all of the oil will not drain out properly due to the angle of the oil pan. Does the oil drain better if the car is completely level? I have also jacked the car up to removed the filter and start the oil draining and then lowered the car flat to let it continue draining. Which is the best method?
